(Healthy) Burger anyone??

On Saturday, after our first swim in the beach and while starving, we headed to a restaurant to grab a bite (or more...). To my surprise the catalog included burgers as well, so we all decided to have one. The best part was that not only they were delicious ,they felt homemade in contrary to those of fast food joints. This had me thinking about lighter versions of the traditional burger that could easily fit in a healthy diet. Because who doesn't love a burger?

Το Σάββατο, μετά το πρώτο μας μπάνιο στη θάλασσα κι ενώ πεινούσαμε, πήγαμε σε ένα εστιατόριο να τσιμπήσουμε (και λίγα λέω..). Προς έκπληξη μου ο κατάλογος περιελάμβανε και χάμπουργκερ, οπότε αποφασίσαμε να φάμε από ένα. Το καλύτερο ήταν ότι όχι μόνο ήταν πεντανόστιμα αλλά έμοιαζαν σαν φτιαγμένα στο σπίτι σε αντίθεση μ'αυτά που τρώμε στα φαστφουντάδικα. Έτσι άρχισα να σκέφτομαι για εναλλακτικές προτάσεις, πιο ελαφριές που θα μπορούσαν να ενταχθούν σε μια υγιεινή διατροφή. Γιατί σε ποιον δεν αρέσουν τα χαμπουργκερ??

Portobello Mushroom Burger (via)

What you'll need:

-4 large portobello burgers
-4 whole grain sesame bagels
-2 red peppers
-lettuce leaves
-2 tbsp aged balsamic vinegar
-4 tsp wholegrain mustard
-4 tsp organic ketchup
-4 tsp egg free mayonnaise
-1 tbsp olive oil

How to:

First prepare the peppers and mushrooms. Preheat the oven and oil a baking pan. 
Put whole peppers in the oven to roast. 
Place the mushrooms in the baking pan, face up with stems removed. 
In each mushroom cavity pour 1/2 tbsp balsamic and using a brush spread it to cover. 
Add some pepper and bake them for 15-20 minutes, until they look browned and flat.
To assemble the burgers : Cut bagels and spread 1 tsp mustard and ketchup on the bottom bun and 1 tsp mayonnaise on the top buns. 
Start piling your fillings, first with a few lettuce leaves, then the mushroom and top with 1/2 roasted red pepper. 
You can also add a few thinly sliced onions and sprouts in you have any. Serve with salad.

Ultimate Greek burger (via)

What you'll need:

¼ cup finely chopped red onion
¼ cup chopped fresh parsley
3 tablespoons pine nuts
¼ cup sun-dried tomatoes in oil, drained and chopped
3 cloves garlic, minced
¼ cup crumbled feta cheese
2½ tablespoons Homemade Greek Seasoning
2 cups arugula leaves
½ cup Tzatziki
Sliced tomatoes
Sliced red onions
Extra crumbled feta cheese
4 hamburger buns, lightly toasted

How to:

Combine the meat, red onion, parsley, pine nuts, sun-dried tomatoes, garlic, feta cheese and Greek seasoning in a mixing bowl. Work with your fingers until the mixture is thoroughly combined. Form into 4 patties. 
Grill or pan fry over medium-high heat for 2-3 minutes on each side or according to desired doneness (is using poultry or pork, make sure it's thoroughly cooked through).
Arrange some arugula leaves on the bottoms of each hamburger bun and place the patties on top. Top with tomatoes, red onions, tzatziki sauce, and crumbled feta cheese. 
Place the top bun on each burger and serve immediately with extra tzatziki sauce.

  6. Loving burgers! Personally, I choose the "healthy" option. As a vegan, I choose only vegetable burgers which normally go with more vegetables, but if I want to spoil me I pair them with fried potatoes.
