How to: Homemade lemonade. Cheers!!!

Hello there friends! How was your weekend? Mine was great, exactly as I was hoping to be on my last post. 
I added yet another "obsession" to my list and that is none other than lemonades. Yup! I have been ordering homemade lemonade in one of our favorite cafe lately and on Saturday a bartender recommended a virgin cocktail along with my sushi dish as I'm not an alcohol lover (yes, people like me do exist!). He offered me a lemonade with ginger and other ingredients I can't remember right now but I'll make sure to go back there soon. 
Until then I decided to make my own mocktails (non-alcoholic cocktails) and so today I'm sharing two of the recipes that caught my eye. Cheers!

Γεια σας φίλοι! Πως περάσατε το Σ/Κ? Το δικό μου ήταν τέλειο όπως ήλπιζα ότι θα είναι στο τελευταίο μου ποστ.
Πρόσθεσα ακόμα μια "εμμονή" στη λίστα μου κι αυτή δεν είναι άλλη από τις λεμονάδες. Ναι! Πίνω τελευταία σε ένα από τα αγαπημένα μας καφέ σπιτική λεμονάδα και το Σάββατο ένας bartender πρότεινε να συνοδεύσω τo sushi μου με ένα κοκτέιλ χωρίς αλκοόλ καθώς δεν πίνω οινοπνευματώδη ποτά (ναι, υπάρχουν άνθρωποι σαν εμένα!) Μου πρόσφερε μια λεμονάδα με τζίντζερ κι άλλα συστατικά τα οποία όμως δεν θυμάμαι αλλά θα ξαναπάω εκεί σύντομα.
Μέχρι τότε αποφάσισα να φτιάξω τη δική μου σπιτική λεμονάδα και μοιράζομαι μαζί σας δύο από τις συνταγές που τράβηξαν τη προσοχή μου. Στην υγειά μας!

Spicy Ginger lemonade (via)

What you'll need:

  • 10 ounces fresh ginger
  • 2 cups sugar
  • 10 cups water, divided
  • 2 cups freshly-squeezed lemon juice (from about 15 lemons)

Peel the ginger and chop into roughly 1/4-inch pieces. 
Combine the ginger, sugar, and 4 cups of the water in a medium pot over high heat. 
Bring to a boil, reduce the heat to medium, and simmer for 45 minutes. 
Strain the syrup through a fine mesh sieve, pressing on the ginger with the back of a spoon. You should have about 3 cups of syrup. 
Cool to room temperature.
Combine the lemon juice and remaining 6 cups water in a large pitcher or pot. Stir in all of the ginger syrup. Chill before serving or serve over ice.

Honey lemon  balm spritzer recipe ( via )

What you'll need:

  • ½ cup honey (orange blossom or other citrus blossom honey is nice for this recipe)
  • 2 cups warm water
  • ½ cup lime or lemon juice (or combination of the two)
  • 1 cup cold water
  • 1 cup lemon balm, lightly packed (substitute mint leaves for a minty version)
  • lime or lemon slices
  • 2 cups cold sparkling water
In a large pitcher, mix honey and warm water until honey combined.
Add lime/lemon juice, and 1 cup cold water. Mix well. 
Crush lemon balm and add to mixture. Using a muddle or wooden spoon handle, smash lemon balm in bottom of pitcher. 
Add lime/lemon slices and refrigerate mixture until chilled (about an hour).
Once chilled, add 2 cups of cold sparkling water. Stir.
Pour through a strainer into individual glasses over crushed ice.
Garnish beverages with lemon balm leaves and citrus slices
For alcoholic version, stir in 1 oz. of light liquor to each glass.
